months, plan your planting so crops reach their maturity by this time, as they grow little then. Smaller sized plants will hold back growth until the second week in February, when they will shoot up again, almost overnight.
Planning, timing, venting or adding extra cover when conditions in temperature change are the most important aspects of winter gardening. It requires paying close attention to the weather and your green instincts. Mostly, it is much easier than growing food during conventional times of the year.
Little watering is needed, there are few, if any, bugs. The rewards of fresh food in an otherwise “dormant” time of year are all that much more appreciated. How fitting for a season traditionally associated with reflection and gratefulness!
