The apple thrives in the Shenandoah Valley because it is perfect apple growing country. They grow well on mountain slopes, because the blossoms are protected from a freeze and the trees are able to enter into dormancy in the winter.

The United States rank third in the world in apple production.

As I think back and remember when we made apple butter every fall, there was much work that went into it. It was an all day job as it had to be stirred all day without stopping, from the time you started until it was taken up.

We had our own copper apple butter kettle. This was put on a large iron rack which held the kettle up from the fire. This made it easier to add more wood to the fire as it was needed, or to pull the fire back if it got too hot. It was important to keep an even fire so the apples would not boil too fast.

The apples were gathered and a certain day was set to make apple butter. The kettle was cleaned with vinegar and soda and the jars were washed.

The night before, the neighbors would come in and help with pulling and slicing the apples. We all sat in the kitchen and what an enjoy
