Arrange chicken halves — skin side up — on top. Brush with melted butter. Sprinkle with remaining rosemary.

Bake, uncovered, about an hour or until chicken is done and vegetables are tender.

Variation:

Oregano Chicken: Substitute fresh oregano for rosemary and potatoes for carrots. Omit butter. Brush with olive oil.

Cherry Tomatoes

with Balsamic

Vinegar and

Toasted Crumbs

Cut some ripe cherry tomatoes in half. Drizzle with less balsamic vinegar than you think you need.

Top with your favorite fresh herbs.

Lightly brown some bread crumbs in butter or olive oil and while still warm, sprinkle over tomatoes and herbs.

Serve immediately as a salad or microwave to gently heat and serve as a side dish.
