dessert or entertainment wines such as the sherries, ports or Madeira. Robust cheeses such as Bel Paese, Brie, sharp Cheddar, Camembert and Stilton are appropriate accompaniments. Typical sherries would be those which are sweet and rich such as Golden and Rare Cream. The ports would include Rare Souzzao and Rich Ruby, which taste best with cheese, nuts and simple cakes.
Of interest is the fact that, with the exception of fortified wines such as sherry or port, these dessert wines have been infected with Botrytis cinerea, a mold which has rendered them rotten. In France this is referred to as pourriture noble or the noble rot. The condition, known in Germany as Edelfaule, forms on the grapes in the later stages of development under certain levels of warmth and humidity.
