This time of year sweet potatoes are abundant either form your garden or grocery store. They taste good and are good for you. A versatile vegetables, they can be eaten raw1, baked, mashed, candied or souffled or bsed to bake breads and muffins.
One medium sweet potato provides a full day’s supply of vitamin A for only 135 calories (it’s the brown sugar, butter, margarine, etc. that adds the calories.).
Selection
When selecting sweet potatoes, look for smooth, plump potatoes that are clean, dry and uniform in shape and color. Size and variety are a matter of personal preference.
