One pound of sweet potatoes equals three mediums sweet potatoes or 1 3/4 cups mashed or three servings.
Basic Preparation
To bake, lightly grease the skins of clean potatoes and bake at 375 degrees F for 60 minutes.
Or, piece several times with a fork, wrap in a paper towel and bake 3/5 minutes per potato in the microwave oven.
To boil, cook in boiling water to cover 20 to 25 minutes. Drain, cool and remove skins. Cooked potatoes may then be mashed, candied or used in recipes for breads and muffins.
