Beat together the egg, milk and cooking oil. Then stir in the rest of the ingredients, leaving the mixture slightly lumpy. Cook on griddle or in cast iron frying pan just like regular pancakes.
Each day you may add another egg to the leftover mix. It becomes less and less Irish and more and more like a French crepe. (That’s part of my great American melting pot theory of cooking.)
