Basil Oil

Instead, of slathering butter on your bread, enjoy this continental, heart-healthy, bread >spread alternative.

Makes one pint, serving six to eight.

Ingredients

IVz cups basil leaves left on the stems (picked over, washed and well-dried)

1 3/4 cups olive oil (appnndmately)

Directions

Put basil into a pint canning jar. Add oil to cover basil and fill jar. Refrigerate 24 hours. Longer is OK. Keeps indefinitely in the refrigerator. Do not store at room temperature.

lb serve, pour oil into a shallow dish and serve with coarse, crusty bread for dipping.
