Here are the scientific facts about consuming fresh pork. The only way you can contract trichinosis is to eat meat from an animal that is infected with this parasite and eat the meat raw )r barely cooked. Most hogs today are absolutely free of this parasite and would never give you trichinosis even if you did eat it raw. As a food shopper you don’t know whether the fresh pork in the meat case comes from an infected animal or not, so the best idea is to cook all fresh pork products to an internal temperature of 170 degrees F. Trichinella spiralis is killed at an internal temperature of about 140 degreees F. Not only will cooking destroy the trichinosis parasite, but freezing pork products at 0 degrees F or below will as well, adds Mrs. Wiley.
Cooling pork in the microwave oven has also had its share of warnings. Because it has been debated whether the microwaved pork roast cooks evenly to the safe temperature of 170 degrees F, many oven manufacturers have not recommended fresh pork cookery for microwaves. But thanks to a lot of testing and research, the National Livestock and Meat Board, as well as the National Pork Producers Council, are pleased to announce that safe and delicious results can be achieved by microwaving fresh pork in an oven cooking bag.
