What to write the recipe column on every week can some times be difficult, unless you always pick a seasonal item. However, the Virginia Egg Council, Inc. recently provided me with a wonderful booklet called Breakfast and Brunch Concertos as well as other egg facts.

From time to time we use recipes from the council and this week we will look at a few egg facts and then a great selection of old favorite recipes bumped up a notch. The recipes are bound to please the family, while minimizing kitchen time for the cook.

Eggs are basically considered a breakfast food. Why do nutrition experts tout a good breakfast as the most important meal of the day? After a long night’s fast, it fuels your body with nutrients for the day’s activities.

Studies have shown that performance of both mental and physical tasks improves with ■ proper nourishment. Both children and adults are more productive and have less late-morning fatigue and faster reaction times when they’ve had a nutritious breakfast.

Many Americans are once again enjoying the allAmerican ritual of a good breakfast. They’ve heard the good news that eggs are lower in cholesterol than previously thought and, even more important, that fat in the diet plays a far greater role in raising blood cholesterol level than dietary cholesterol does according to the Virginia Egg Council, Inc.
