For example, when receiving or buying food check the expiration and use by dates. Check to make sure the required and appropriate government inspection stamps are on the package or product. The packaging should be intact and not damaged. For canned goods avoid bulging, rusted, dented and any cans with leakage and bring it to the store manager’s attention.

Make sure when you purchase food that it has been stored properly in the store. For example, I have seen processed cheese in grocery store displays that is not refrigerated. Processed cheese should be kept in the refrigerated case. Frozen foods should be solidly frozen and have not sign of thawing and refreezing, which might be indicated by large ice crystals or liquid frozen at the bottom of the package. Purchasing foods in good condition is one of the first critical control points that consumers can use to keep their food safe.
