French Toast

8 eggs

1/3 cup skim or low-fat milk

1/4 teaspoon ground nutmeg, optional

8 slices bread

Fresh fruit slices, applesauce, preserves, syrup or confectioners’ sugar, optional

In shallow dish, beat together eggs, milk and nutmeg, if desired, until well blended. One slice at a time, soak bread in egg mixture, letting stand about one minute on each side. Heat lightly greased 10-inch omelet pan or skillet over high heat or griddle until just hot enough to sizzle a drop of water. Place bread in hot pan. Reduce heat to medium. Cook on both sides until lightly browned and no visible liquid egg remains. Serve immediately topped with fruit, if desired. Makes four to eight servings.
